Sliced ​​pork on Christmas and tasting Costica 2021

This year too, we have kept the tradition of cutting pork before Christmas, with all the things that come to pull you back and make you say that it is easier to buy what you need.


Time passes and with the aging of the parents, the difficulties also appear: a back pain, a leg pain, a hernia ... of the age. Difficulties will always arise, no matter how you position yourself and how you continue to move, to be connected to your loved ones and to do those things that unite you and give you a purpose.



This year, I bought the pig from a gentleman from the village who seems to be a good farmer. He had 3 pigs raised by him and his family, one for him, one for children and one for sale. It had a beautiful, clean and tidy garden, which shows that it cares. He said that he had just finished preparing the land, that he had not had time, that he had put it in the manure and loosened it with the tractor.



Everyone from the villager's family contributed at the time of taking over the pig, including the puppy puppies that came to greet us when we left. Because we were in a hurry, we refused the man's tuica, offered as a sign of gratitude. Next time we hope not to refuse because your soul is so broken that you can't do things in peace ... it seems that the rush has reached the country as well.



And so, with the help of a few neighbors, I brought the animal to the yard and managed to mark the moment with a boiled brandy and pickles. Tuica was well soured by my mother who mixed the sugar with lemon salt, and the people who helped us, the poor of them, left a little disappointed. But I am convinced that my father has made up for it, that it is not in vain that he brags that he has the best brandy and the best wine in the slum :).



This year it was my turn to lie down, because the pain from the hernia did not allow my father to prepare it properly. I brought new knives, satar and the technique acquired over time and calibrated by watching videos on youtube, but my father still did not give up. I made a good team in the end, as I proved the piglet until the evening.



On the day of the cut (as from a whole weekend the habit was reduced to one day, also from haste and agitation ...) we also tasted Costica ... the young and the gentle. The white wine came out very good and aromatic, and the red wine a little sour because it was the first to be harvested from the village, also due to the lack of time and peace that is starting to disappear. But both are good, strong and fragrant, with the potential to age ...



And the wine did not go well with fresh mice, which this year came out softer than usual, coarse salt ear and of course pork alms.



I hope that the calm of the moment will return and that the daily rush will not take over these moments that bring us closer and make us feel good ...
