I've been reading recently about how technology can make drinks that are normally made in years in a shorter time, like the Scottish Scotch that is made in years, or beer that ferments in a very short time, and what I found that and in wine it is the same, especially with its filtration.
Costica the Wise One is an example in this sense, namely the fact that you can filter it and your bauble will come out in a relatively short time, or let it filter itself and only in two years you can start to really enjoy it. its flavor. And that makes a craft wine to be appreciated, even if I heard from someone like newer, a craft wine can be cloudy when you drink it. Really?
So, if until now I was still flirting with the idea of buying a filter for white wine, after I tasted Costica the Wise One 2018, now in 2021, I will give up this idea to keep the concept of Artisanal wine where must.
And I felt like I was moving away from the main reason why I set out on this journey, namely the lack of patience, to have something nice done after a waiting time, which for me was a challenge. I, who am such a hectic person, have learned to wait and appreciate the quality that comes in time ...
